Recipe for cauliflower soup without cream from Samana Mustafa

Ingredients:
  • 2 cups roughly chopped cauliflower
  • 1 finely chopped onion
  • 1 tsp finely chopped garlic
  • 1tsp butter
  • Salt and black pepper to taste
  • 1 glass of milk
  • 1/4 cup of water
  • 1/2 cup cream (optional)

Method:
  1. Saute onion and garlic in 1 tsp butter till onions are tender.
  2. Add cauliflower and saute for 5 - 7 minutes.
  3. Add salt and freshly ground black pepper and saute for a minute. You will need a glass of milk for this.
  4. Add little milk or say half of it and with the help of electric blender blend it to form a smooth paste.
  5. Add remaining milk and 1/4 cup of water.
  6. Cook for 15 minutes on low flame.
  7. Serve hot.
Tip: 
If you want to add cream, you need to cut down the quantity of milk to half and add cream just before taking the soup off the flame.
