Spinach soup recipe from Samana Mustafa

Ingredients:
  • Spinach (2 cups)
  • Butter (1 tsp)
  • Garlic paste (1/2 tsp)
  • 1 tsp  all purpose flour
  • 1 cup milk
  • Salt and pepper to taste

Method:

  1. Blanch 2 cups spinach and grind to make fine paste.
  2. In a pan, heat 1 tsp butter and saute 1/2 tsp garlic paste.
  3. Saute spinach paste for 3 minutes.
  4. In a separate pan, heat 1/2 tsp butter and saute 1 tsp flour for 2 minutes. Ensure that the flour doesnt change color.
  5. Take off the pan from gas stove and pour 1 cup milk.
  6. Mix well.
  7. Return the pan on fire on medium heat stirring constantly to avoid formation of lumps. Cook till it resembles custard. This is our white sauce.
  8. Mix the white sauce in the spinach pan and add salt and pepper.
  9. Cook for 5 minutes.
  10. If the soup gets thick add some more milk or water.
Tip:
You can also add cream before serving but this is purely optional depending upon your taste.
